Ingredients
- 4 tablespoons of quinoa
- 1/3 cup of water
- 1/4 cup of canned coconut milk (without gums or thickeners)
- 1 teaspoon of honey (if desired)
- 1/2 cup of blueberries
Preparation:
- In a small saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat and simmer until the water is almost absorbed.
- Add the coconut milk and continue cooking until the quinoa is soft and has expanded in size. Remove from heat.
- If using, stir in the honey.
- Top with blueberries and enjoy immediately.
