Low Histamine Quinoa Porridge

Ingredients

  • 4 tablespoons of quinoa
  • 1/3 cup of water
  • 1/4 cup of canned coconut milk (without gums or thickeners)
  • 1 teaspoon of honey (if desired)
  • 1/2 cup of blueberries

Preparation:

  1. In a small saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat and simmer until the water is almost absorbed.
  2. Add the coconut milk and continue cooking until the quinoa is soft and has expanded in size. Remove from heat.
  3. If using, stir in the honey.
  4. Top with blueberries and enjoy immediately.
