Berry chia parfait

Ingredients:

  • 8 tablespoons of chia seeds
  • 1 cup of canned coconut milk (without thickeners or gums)
  • 2 tablespoons of honey (or use maple syrup for Low FODMAP or vegan)
  • 2 cups of mixed berries (such as strawberries, raspberries, blueberries)
  • 2 tablespoons of Vanilla and Cinnamon Granola (optional)
  • A few sprigs of mint for decoration

Preparation:

  1. In a bowl, mix the chia seeds, canned coconut milk (keeping a few tablespoons aside), and honey together.
  2. In a blender, combine the berries (keeping some for decoration) and the remaining coconut milk until smooth.
  3. Divide a quarter of the coconut chia mixture into the bottom of 4 glasses, then carefully layer the remaining berry mixture on top without mixing the two colors.
  4. Refrigerate the parfaits for at least an hour (or overnight) to set.
  5. When serving, top the parfaits with the reserved berries, a sprinkle of granola (if desired), and a mint sprig for decoration.
