Ingredients
- 16 cooked and peeled jumbo shrimp
- 2 ripe avocados
- 2 large tomatoes, deseeded and diced
- 3 limes (4 tbs lime juice, the rest cut into 8 segments for garnishing)
- 4 tbs olive oil
- Salt and pepper to taste
- 2 handfuls salad greens, roughly chopped
- 16 teaspoons mayonnaise (made of greek yogurt)
- Dill for garnishing
- Caviar for garnishing (optional)
Method
- Cut each shrimp into 3 or 4 pieces. Place the shrimp, avocados and tomatoes in a bowl. Drizzle with the lime juice and olive oil. Lightly season with salt and pepper. Lightly mix being careful not to damage the avocado.
- Place some salad greens in the bottom of 8 pretty cocktail glasses.
- Scoop in the shrimp mix, evenly distributing it between all glasses.
- Top with 2 teaspoons of mayonnaise per glass.
- Garnish with a sprig of dill, a wedge of lime and a sprinkle of caviar (if using).
