Shrimp cocktail

Ingredients

  • 16 cooked and peeled jumbo shrimp
  • 2 ripe avocados
  • 2 large tomatoes, deseeded and diced
  • 3 limes (4 tbs lime juice, the rest cut into 8 segments for garnishing)
  • 4 tbs olive oil
  • Salt and pepper to taste
  • 2 handfuls salad greens, roughly chopped
  • 16 teaspoons mayonnaise (made of greek yogurt)
  • Dill for garnishing
  • Caviar for garnishing (optional)

Method

  • Cut each shrimp into 3 or 4 pieces. Place the shrimp, avocados and tomatoes in a bowl. Drizzle with the lime juice and olive oil. Lightly season with salt and pepper. Lightly mix being careful not to damage the avocado.
  • Place some salad greens in the bottom of 8 pretty cocktail glasses.
  • Scoop in the shrimp mix, evenly distributing it between all glasses.
  • Top with 2 teaspoons of mayonnaise per glass.
  • Garnish with a sprig of dill, a wedge of lime and a sprinkle of caviar (if using).
