Ingredients:
- 2 filets of white fish (such as cod or halibut), cooked and flaked
- 1 zucchini, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- Juice of 1 lemon
- Salt and pepper to taste
- Fresh herbs (parsley, thyme, oregano)
- Cooked quinoa as a base
Steps:
- Preheat the oven to 200°C (392°F).
- Arrange zucchini, bell pepper, red onion, and garlic on a baking sheet.
